Farm-Fresh Guacamole

Today has been a "warm" Minnesota winter day {40 degrees} & I'm already dreaming of spring.  This is my {premature spring-fever} cure!

You'll need:
2 ripe avocados
1 lime
1/2 c. steamed sweet corn, slightly cooled {I just used the Birdseye Steamfresh frozen corn}
6-8 cherry tomatoes, chopped
1/4 to a 1/2 of an onion, finely chopped
1 pinch of salt {optional}

  • Cut & "peel" the avocados {click here for the how-to
  • Mash them in a medium bowl, using a fork
  • Squeeze the juice from your lime into the mashed-avocado & continue to blend with a fork.
  • Add the sweet corn, tomatoes, onion... give or take with the amounts, depending on how much texture you like.  
  • Add a little salt, to taste.
